Strawberry Mochi - calico cat edition

Strawberry mochi decorated as cute calico cats

Ingredients
  

Mochi Dough

  • 50 grams glutinous rice flour
  • 15 grams cornstarch
  • 15 grams sugar
  • 90 grams milk
  • 10 grams butter

Mochi Filling

  • 120 mL whipping cream/heavy cream (35% cream)
  • 12 grams sugar
  • 1/4 tsp vanilla extract (optional)
  • strawberries, chopped

Instructions
 

Mochi Dough

  • Combine glutinous rice flour, cornstarch, sugar, and milk into a bowl. Mix it well and strain it by putting it through a mesh sieve to ensure there are no clumps.
  • Cover the bowl with plastic wrap and poke some holes on top. Microwave it ~2 minutes until cooked.
  • Add the butter and mix it with a spatula
  • Knead the dough by hand once the dough has cooled enough to touch. Knead the dough until you can stretch it without breaking.

Whipped Cream Filling

  • In a bowl, add in cream, sugar, and optional vanilla extract
  • Mix until you get stiff peaks

Assembly

  • Take a piece of white mochi dough and place bits of brown and orange dough on top.
  • Roll out the dough
  • Place the dough into a bowl. Pipe whipped cream inside along the edges, fill with strawberries, and then pipe more whipped cream on top.
  • Wrap up the dough and cut off any excess.
  • Make the cat ears out of mochi dough or pinch up bits of dough to create the ears.
  • Draw on the cat face with melted chocolate

Notes

Make sure your work surface is covered with cooked glutinous rice flour when rolling out the dough. This prevents things from sticking.
To cook the glutinous rice flour, heat some flour on a pan on low heat for a few minutes  until it changes in color.
