Watermelon Cake

How to make the watermelon cake

This is a basic cake recipe consisting of basic ingredients:

  • eggs
  • milk
  • oil
  • vanilla extract
  • cake flour
  • cream of tartar (helps stabilize egg whites)
  • sugar
  1. In a large bowl, add in the egg yolks, milk, oil, and vanilla extract. Mix this together with a whisk until it is combined. 
  2. Sift in the flour and mix until combined. Set this bowl aside
  3. In a separate large bowl, add in the egg whites and  cream of tartar. Beat with a hand mixer until it is frothy then add in the sugar 1/3 at a time. Beat until you get stiff peaks. (refer to picture below of a stiff peak)

4. Add some of the egg  white mixture into the egg yolk batter. Gently mix until it is combined.
5. Add the egg yolk batter into the remaining egg whites.  Gently fold until it is combined.
6. Divide the batter and dye. Dye about 2/3 of the batter red and the remaining green and white.

8. Starting with the green batter, pipe along the bottom edge of the cake pan. 
9. Take the white batter and pipe a ring right next to the green batter. 
10. Pipe the red batter into the center
11. Repeat this piping process until you are out of batter
12.Gently drop the cake pan a few time to release any air bubbles
13. Bake at 285F for 55 minutes

Equipment needed

  • 2 mixing bowls. (One for the egg whites and one for the egg yolks)
  • Whisk
  • Spatula
  • Hand mixer. This is used to beat the egg whites to stiff peaks. You could do this by hand with a whisk but it will be HARD WORK. It’s much easier with a hand mixer (or a stand mixer if you have one)
  • Food coloring – red and green
  • Piping bags. This is used to pipe out the watermelon design with the batter.

Ingredients
  

  • 3 eggs, seperated
  • 40 grams milk
  • 25 grams oil
  • 1 tsp vanilla extract
  • 53 grams cake flour
  • 1/4 tsp cream of tartar
  • 45 grams granulated sugar
  • food coloring – red and green

Instructions
 

  • In a large bowl, add in the egg yolks, milk, oil, and vanilla extract. Mix until combined.
  • Sift in the flour and mix until combined. Set aside.
  • In a separate large bowl, add in the egg whites and cream of tartar. Beat with a hand mixer until frothy.
  • Gradually add in the sugar 1/3 at a time. Beat until you get stiff peaks
  • Add some of the egg white mixture to the egg yolk mixture. Gently mix until combined.
  • Add the egg yolk mixture to the rest of the egg whites. Gently fold until combined.
  • Separate the batter and dye. Dye ~2/3 of the batter red and the remaining green and white.
  • Transfer the dyed batter into piping bags. Start with the green batter and pipe a ring along the bottom edge of the cake pan. Then switch to the white batter and pipe a ring right next to the green batter. Fill the center with red batter. Repeat this until you have no more batter.
  • Drop the cake pan a few times to get rid of any air bubbles
  • Bake at 285F for 55 minutes
  • Cool the cake upside down. Remove the cake from the cake pan once cake has cooled.
