Thin crepe-like pancakes are wrapped around silky smooth whipped cream and fresh mango to make this delicious pillow shaped dessert.

What is a mango pancake
Despite what the name suggest, mango pancakes are actually more of a crepe and bares no resemblance to an American style pancake.
These mango pancakes are made by taking a thin crepe and wrapping it around fresh whipped cream and a chunk of fresh mango. This results in a beautiful pillow shaped dessert where each bite is like biting into a pillowy soft cloud filled with a sweet juicy mango center.
Making the pancake
These mango pancakes are made with simple ingredients:
- egg
- sugar
- vanilla extract
- all-purpose flour
- milk
- butter
- yellow food coloring. The yellow food coloring is what gives these mango pancakes their signature yellow color. It is purely for aesthetic purposes so feel free to omit if you like.
To make the batter:
- Whisk together the egg, sugar, and vanilla extract
- Mix in the milk, butter, and flour.
- Add in the yellow food coloring
- Strain the mixture to ensure there are no lumps by putting the batter through a mesh sieve
Cooking the pancakes:
- Cook in a pan on low heat
- Cook one side only. This leaves a prettier looking side to use for the outside of your mango pancake
- You will know it is cooked when you see bubbles forming on top
- Transfer pancake to wire rack to cool before assembling or else the pancake will be too hot and melt the whipped cream.
Mango Pancake FIlling
- Mango. Use any type of mango you like. I personally used an Ataulfo mango.
- Whipped Cream. You make this by combining together heavy cream (35% cream) together with some sugar and whipping it with a hand mixer until you get stiff peaks. You can feel free to adjust the sweetness level to your own preference by adding more or less sugar.
Assembly
(refer to pictures below or watch Youtube video)
- Take a pancake and place it down with the side you cooked facing up
- Spread some whipped cream in the center of the pancake
- Place a piece of mango on top of the whipped cream
- Add more whipped to cover up the mango
- Wrap up the pancake by folding in the sides
- Refrigerate at least 1 hour before serving

Mango Pancake
Ingredients
Pancake
- 1 egg
- 13 grams sugar
- 1/2 tsp vanilla extract
- 50 grams all-purpose flour
- 125 grams milk
- 18 grams unsalted butter, melted
- yellow food coloring
Filling
- 100 grams heavy cream/ whipping cream (35% cream)
- 15 grams powdered sugar
- 1 mango
Instructions
- In a large bowl, whisk together the egg, sugar, and vanilla extract
- Add in the milk, butter, and flour. Mix until combined.
- Add in the yellow food coloring
- Strain the batter by putting it through a mesh sieve
- Cook the pancake on a pan on low heat. Cook one side only. You will know it is cooked when you see bubbles form on top.
- Transfer the crepe to a wire rack to cool
- While the crepes are cooling, prepare the whipped cream. Combine the cream and sugar together in a bowl and whip until stiff peaks.
- Assemble the mango pancake by placing a pancake with the side you cooked facing up. Place some whipped cream in the center followed by a mango on top. Cover the mango with more whipped cream then wrap up the pancake.
- Refrigerate the mango pancakes at least 1 hour before serving.
