
What are Langue de Chat?
Langue de Chat is a thin and crispy French cookie. The name translates to “cat’s tongue” because of it’s shape. These cookies are traditionally piped out into long and flat ovular shapes like a tongue.
Langue de Chat can be enjoyed on it’s own or can be dipped or sandwiched between chocolate.
I made my Langue de Chat using a silicon bear mold I got off Aliexpress. I spread my batter into this mold then filled it with white chocolate. This resulted in cookies with a thin, crispy, and crunchy exterior and a sweet white chocolate center.

How to make Langue de Chat
Langue de chat is composed of very simple ingredients:
- butter
- sugar
- egg white
- vanilla extract
- flour
To make the cookie:
- Mix the butter and sugar together until light and pale in color
- Gradually add in the egg white. This ensures everything is well incorporated.
- Mix in the vanilla extract
- Add in the flour and mix until combined.
- Place the mold onto a lined baking sheet. Spoon the batter out onto the mold. Use a spatula to smoothen it out and get rid of any excess batter. Remove the mold to reveal the cookies then repeat the process until you have no more batter.
- Bake the cookies at 170C/338F for 9-10 minutes. Keep an eye on the cookies. Take them out when you see the edges turn a golden brown.

How to make the chocolate filling
The filling is simply white chocolate. To melt the white chocolate, I used the double boiler method. This is done by taking a pot of water and putting a bowl over the pot. You want the bowl to be large enough to sit over the top of the pot and ensure that the bottom of the bowl doesn’t touch the water.
Add white chocolate in the bowl and turn on the heat. You want the water to be just simmering. The chocolate will begin to melt. Stir the chocolate with a rubber spatula until it is fully melted.
Once the chocolate has melted, either spoon it or pipe it into the same molds you used to make the cookies. Then pop it into the freezer for about 15 minutes until it hardens.
Once the chocolate has hardened, you should be able to pop the chocolate right out of the molds.
Assembling the cookies
To assemble the cookies,
- Take a cookie and dab a bit of melted chocolate onto it. This will help glue everything together. Otherwise the cookies and the piece of white chocolate would just slide off each other.
- Place a piece of white chocolate on top of the cookie
- Place another cookie on top to create a cookie sandwich.
And there you have it. Cookies are complete! If you want, you can draw on bear faces with melted chocolate like I did. I think this makes the cookies cuter.

- Bear shaped Langue de Chat baking mold. (I got mine off Aliexpress)
- Baking tray
- Silicon mat
- Mixing bowl
- Spatula
- Bench scraper
- Food scale

Ingredients
- 40 grams butter
- 40 grams icing sugar
- 1 egg white
- 1/2 tsp vanilla
- 40 grams cake flour
- white chocolate for filling
Instructions
- Mix the butter and sugar together until it is light and pale in color
- Gradually add in the egg whites
- Mix in the vanilla extract
- Add in the flour and mix until well combined
- Transfer batter into molds
- Bake at 170C/338F for 9-10 minutes. Keep an eye on them. Take the cookies out when they turn golden brown around the edges.
- Melt the white chocolate then transfer the chocolate into the mold. Place into freezer for about 15 minutes until it sets.
- Assemble the cookies by placing some melted chocolate on the cookies then sandwiching a piece of white chocolate between the cookies.
