I’m not sure if you know about Jellycats but Jellycats are a brand that sell these plush toys. They have a collection called Amuseables which features many foods with a cute little smile on it. They are the absolute cutest things ever. These mochis are inspired by those. Of course there is no real Amuseable mochi but maybe someday…

What is mochi?
Mochi is a rice cake that is made with glutinous rice flour. They are soft and chewy and can be filled with a variety of fillings.
This particular mochi I made and am sharing with you today is filled with whipped cream and crushed Oreos.
Making the mochi dough
First of all, mochi is made with glutinous rice flour. This is not to be confused with regular rice flour. The mochi will NOT turn out well if you use regular rice flour. And no, there are no substitutions for glutinous rice flour.
This is a quick and easy microwave recipe. There are other recipes out there that require you to steam the dough but that takes a lot longer so I prefer the microwave method.
The mochi dough requires just 5 ingredients:
- glutinous rice flour
- corn starch
- sugar
- milk
- butter
- Mix everything together. In a bowl, add glutinous rice flour, corn starch, sugar ,and milk. Mix this together and then strain the mixture by putting it through a mesh sieve. This ensures you don’t have any clumps of flour in the mochi.
- Microwave. Cover the bowl with plastic wrap and poke some holes into the plastic wrap. You can use a toothpick or a knife to do this. Microwave it until it is cooked. This takes about 2 minutes. You know it is cooked when it has turned into a solid consistency.
- Add the butter. The dough will be very hot at this point. It will melt the butter. Use a spatula to mix everything together.
- Knead the dough. Once the dough has cooled enough to touch, knead the dough until it can be stretched without breaking. (watch my video if you want to see how stretchy the dough becomes!)
Mochi Filling
This mochi is filled with whipped cream and crushed Oreos.
- To make the whipped cream, add cream and sugar (and optional vanilla extract) into a bowl and mix until stiff peaks. Transfer the whipped cream into a piping bag.
- Crush the oreos. Either use your hands to break the oreos apart or put it into a bag and whack at it with a rolling pin.
Assembly
(refer to pictures below)
- Roll out your dough into a flat disc. Make sure your working surface is coated in cooked glutinous rice flour to prevent things from sticking. You can cook the glutinous rice flour by heating it on a pan on low heat until it changes in color slightly.
- Place the dough into a bowl
- Pipe whipped cream inside the dough along the sides
- Fill the inside with crushed Oreos
- Pipe more whipped cream on top
- Wrap up the dough and cut of any excess dough
- Flip the bowl over to get the mochi out

Decorating the mochi as a Jellycat
Besides the smile, another feature of an Amuseable Jellycat is their little feet. To make the feet, take some of the mochi dough and dye it brown. Then ball it up for the feet and roll up logs for the legs.
- Take your mochi and add on the feet and legs.
- Pipe on the face with melted chocolate.

TIPS
- Knead the dough on a silicon mat. I found the mochi dough not to stick to silicon mats. It makes kneading much easier.
Oreo Mochi – microwave version
Ingredients
Mochi skin
- 50 grams glutinous rice flour
- 15 grams corn starch
- 15 grams granulated sugar
- 90 grams milk
- 10 grams unsalted butter
Filling
- 120 mL heavy cream/whipping cream (35% cream)
- 12 grams sugar
- 1/4 tsp vanilla extract (optional)
- crushed oreos
Instructions
Mochi dough
- In a bowl, add glutinous rice flour, corn starch, sugar, and milk together. Mix it until combined and then strain it by putting it through a mesh sieve.
- Cover the bowl with plastic wrap. Poke some holes on top. Microwave this until it is cooked. (~2 minutes)
- Add the butter and mix with a spatula.
- Knead the dough once it has cooled enough to touch. Knead until the dough can be stretched without breaking.
Whipped cream for the filling
- Add the cream and sugar (and optional vanilla) to a bowl. Whisk until you get stiff peaks
Assembly
- Roll out the dough into a flat disc on a surface covered with cooked glutinous rice flour *
- Place the dough into a bowl and then pipe a layer of whipped cream inside along the edge. Fill the middle with crushed Oreos. Top with more whipped cream.
- Wrap up the mochi and cut off any excess dough.
Notes
BONUS BAO/DUMPLING JELLY CAT!
I pinched the top of the mochi and ended up with a bao! It could also be considered a dumpling but I’m calling it a bao. Isn’t it adorable?
