A simple 5-ingredient recipe is used to make these cute and fun icebox cookies.  

How to make the cookie dough

The cookie dough is comprised of 5 simple ingredients:

  • Butter
  • Powdered sugar
  • Egg
  • Vanilla extract
  • All-purpose flour

The dough can be made in a few simple steps as well:

  1. Cream together the butter and sugar
  2. Add in the egg and vanilla extract.  Mix until combined
  3. Add in the flour and mix until a dough forms.

That’s it! 3 easy steps to make the cookie dough. 

Once your cookie dough is complete, divide and dye the dough into your desired colors then move onto the shaping stage. 

I divided the dough in half and used half  the dough to make the Watermelon Jellycats and the other half for the Boiled Egg Jellycats. 

Shaping the Watermelon Jellycats

For the watermelon Jellycat I made, you need 4 colors:

  • red
  • white
  • green
  • brown (for the feet)

How to shape the watermelon Jellycat icebox cookies. (refer to pictures below or watch Youtube video)

  1. Take your piece of red dough and roll it into a log. This is the red flesh of the watermelon. Place this in the refrigerator for at least 1 hour for it to firm up. 
  2. Take your white  dough. This will be the white rind layer of the watermelon. Roll it flat with a rolling pin until it is big enough to cover the surface of the red dough log. Wrap the white dough around the red. Ensure the white is wrapped tightly around the red or else you will end up with holes/gaps once you slice the cookies. Refrigerate this again. 
  3. Take the green dough. This will be the outside green rind of the watermelon. Roll the green dough out flat like you did with the white dough then wrap it around your dough log. Once again ensure that the dough is wrapped together tightly. Refrigerate until firm. 
  4. Slice the cookies using a sharp knife. Then cut each cookie in half to get that Watermelon Jellycat shape. 
  5. Place the cookies onto a lined cookie tray.
  6. Take small pieces of brown dough and ball it up as the Jellycat feet. Add this onto the watermelon. 
  7. Refrigerate the cookies ~30 minutes
  8. Bake at 350F for 10-12 minutes.

Shaping the Boiled Egg Jellycat

For the boiled egg Jellycat,  3 colors are required:

  • yellow 
  • white. You could use white food coloring but it’s also fine to use plain undyed dough.
  • brown 
  1. Take your yellow dough and roll it into a round cylindrical log. Refrigerate this at least 1 hour to firm up. 
  2. Take the white dough and wrap it around the yellow. Shape the white dough like how the egg white would wrap around the egg yolk. Refrigerate this 1 hour.
  3. Slice the cookies
  4. Ball up pieces of brown dough to use as the feet. You can add legs too if you wish. 
  5. Refrigerate the cookies ~30 minutes
  6. Bake at 350F for 10-12 minutes

Decorating The Cookies

You can use either melted chocolate or royal icing to decorate the cookies. 

Make sure the cookies are fully cooled before decorating.

  • 150 grams unsalted butter, softened
  • 90 grams powdered sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 250 grams all-purpose flour

Instructions
 

  • In a large bowl, cream together the butter and sugar
  • Add in the egg and vanilla extract. Mix until combined.
  • Add in the flour and mix until a dough forms
  • Separate the dough and dye into desired colors
  • Shape the dough
  • Slice the cookies
  • Bake at 350F for 10-12 minutes
