Picture this: a buttery, melt-in-your-mouth cookie filled with a delicious chocolate Lindor ball and all topped off with the irresistible cuteness of Avocado Jellycats. These Avocado Jellycat cookies are a combination that’s as fun to make as it is to eat!

What are thumbprint cookies?
Thumbprint cookies are buttery soft cookies that are traditionally filled with a sweet jam center. The jam is typically placed in an indentation in the cookie made by your thumb, hence the name.
For these avocado Jellycat thumbprint cookies I changed things up by using a mini chocolate Lindor ball instead of jam.

How to make the cookie dough
This is a super easy cookie dough recipe. It requires just 5 ingredients and comes together very fast!
- butter
- sugar
- egg yolk
- vanilla extract
- flour
- Cream together the butter and sugar using a hand mixer.
- Add in the egg and vanilla and mix with a rubber spatula until combined.
- Add in the flour and mix until a dough forms
- Divide up the dough and dye the dough green and brown for the avocado Jellycats
Shaping into avocados
These cookies are very easy to shape:
- Divide up the green dough into 10 equal sized pieces.
- Take a piece of the green dough and flatted it into the shape of an avocado
- Make an indentation using a 1/2 teaspoon measuring spoon. I found the 1/2 teaspoon to be the perfect size for mini Lindor balls. Take the measuring spoon and press an indentation where the avocado pit should be. This will leave a perfect sized hole for you to put the chocolate ball later.
- Add on two small balls of brown dough as the Jellycat feet
You can bake the cookies as soon as you finish shaping. There is no refrigeration needed for this recipe.

Decorating the cookies
Make sure to let the cookies cool completely before decorating.
If your cookies have puffed up a bit in the oven and the indentation is no longer that clear, you can use the teaspoon to re-press the indentation in while the cookie is still warm.
Once the cookies are cooled, add some melted chocolate into the indentation and then add on the chocolate ball. The melted chocolate will help the chocolate ball stick to the cookie. You don’t want the chocolate ball to fall off when you pick up the cookie.
Also use the melted chocolate to draw on the signature Jellycat face and then your avocado Jellycat cookies are complete!

TIPS
- Make sure your cookies are completely cooled before decorating. Otherwise the chocolate will melt and cause a mess.
- Re-press an indentation into the cookies after baking if necessary. Do this while the cookies are still warm.
- Want to make this but no chocolate balls? You can fill it with Nutella or melted chocolate. They will look and taste just as good!

Avocado Jellycat Thumbprint Cookies
Ingredients
Cookie Dough
- 115 grams unsalted butter, softened
- 68 grams sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 145 grams all-purpose flour
Decorating
- mini Lindor balls
- melted chocolate
Instructions
- Cream together the butter and sugar using a hand mixer.
- Add in the egg yolk and vanilla extract. Mix with a rubber spatula until it is combined
- Add in the flour and mix until a dough forms
- Separate the dough and dye the dough green and brown for the avocado Jellycat
- Take the green dough and separate it into 10 equal sized balls. Press down on each ball and press it into the shape of an avocado
- Ball up small pieces of brown dough and use it as the Jellycat feet
- Use a 1/2 tsp measuring spoon to press an indent where the avocado pit will go
- Bake at 177C/350F for 12-14 minutes
- Let the cookies cool
- Add some melted chocolate into the indentation of the cookie and then add in a chocolate Lindor ball. The melted chocolate will help the Lindor ball stick to the cookie
- Use the melted chocolate to draw on the Jellycat face
