Hellos to all. Today I share with you these No Face madeleines inspired by the movie Spirited Away. If you have seen the movie then I’m sure you will recognize this character. If you haven’t then you should watch it. I recommend. 

This is just one of many Studio Ghibli inspired treats I have made. Others include the soot brownie cookies, catbus cream bun, no face oreo mousse, and soot oreo mousse.

What are Madelelines

Madeleines are little French cakes. They are made inside a special madeleine pan. This pan is what gives it its distinct shell-shaped design on one side. 

You can should be able to find madeleine pans right next to the normal cake pans and muffin pans at your local store. If not, then you can buy them online. 

Some people actually refer to madeleines as a cookie because of how similar they are to a cookie in the sense that they can easily hold and eat them like a cookie. I personally think they’re too cake-like to be considered a cookie. What do you think? Are they more cake or cookie?

How to make madeleines

The madeleines I made are actually lemon madeleines. They are made with fresh lemon zest which gives these madeleines a delicious lemony flavor. 

Madeleines are very fast and simple to make. There is no need to be intimidated by madeleines. 

The first step to making madeleines is to acquire a madeleine pan. Once you have your pan, you can then start on making the madeleine batter. 

Madeleines are made from very simple ingredients:

  • lemon zest from one lemon
  • 1 large egg
  • 52 grams sugar
  • 52 grams flour
  • 1/2 tsp baking powder
  • 52 grams melted unsalted butter

The steps to make the batter is very simple and straight forward as well:

  1. In a bowl, whisk together the lemon zest, egg, and sugar. 
  2. Add in the flour and baking soda. Mix this until everything combined
  3. Mix in the melted butter.
  4. Refrigerate the batter for 1 hour

Once you have finished your batter, grab your madeleine pan and brush it with melted butter. Place the pan in the fridge along with your batter.

After an hour has passed, transfer the batter into a piping bag and pipe it into the madeleine pan. You can also spoon the batter into the pan as well if you don’t have a piping bag.

Bake the madeleines at 183C/360F for 11 minutes.

Let the madeleines cool before moving onto the decorating stage.

Decorating No Face Madeleines

First, melt some chocolate and place it inside each cavity of your madeleine pan. Gently press the madeleines into the chocolate. Then put the madeleines into the freezer for the chocolate to firm up. This will take about 20 minutes. The madeleines should be able to pop right out of the pan.

Once the madeleines are out of the freezer, draw on No Face’s face with more melted chocolate. Or you can use royal icing at this stage too if you prefer. 

Decorating No Face madeleline

Equipment Needed:

No Face Lemon Madeleines

Ingredients
  

  • lemon zest from one lemon
  • 1 large egg
  • 52 grams sugar
  • 52 grams flour
  • 1/2 tsp baking powder
  • 52 grams unsalted butter, melted
  • Chocolate for decorating

Instructions
 

  • In a large bowl, whisk together lemon zest, egg, and sugar
  • Add in flour and baking powder. Mix until combined
  • Add in melted butter. Mix until combined
  • Cover and let refrigerate 1 hour. At this time also brush a madeleine pan with butter and refrigerate the pan.
  • Transfer the batter into a piping bag and pipe the batter out onto the madeleine pan
  • Bake at 183C/360F for 11 minutes
  • Let madeleines cool before decorating
  • Place melted chocolate into clean madeleine pan and press madeleines gently into the chocolate. Place this into the freezer to set (about 20 minutes).
  • Draw on No Face's face with melted chocolate or royal icing.
